Ingredients
  • 1 whole avocado sliced in half, pitted
  • 2 whole eggs
  • choice of toppings and seasonings
Instructions
  1. Preheat oven to 425 degrees. Cut an avocado in half and take pit out, slice of a thin sliver to make the bottoms flat for baking.
  2. Scoop out some of the middles of the avocado. Place the avocados in an oven safe skillet, pitted side up, propped up against the side to keep them level and steady.
  3. Crack on egg into the center of each avocado half. Add any salt, pepper, or other spices (hot sauce, chili powder, cumin, paprika, or lemon zest all work well.
  4. Carefully place the skillet in the oven for 15-20 minutes, or until egg is set to desire.
  5. Pull out of the oven, add additional toppings and eat with a spoon.
