Ingredients
  • 1/2 whole small red cabbage finely shredded
  • 3 whole roma tomatoes ripe and diced
  • 1 whole yellow bell pepper seeded and diced
  • 1 pound persian cucumbers (about 2 medium) small diced
  • 3 tablespoon lemon juice freshly squeezed
  • 2 tablespoon olive oil
  • 1 tablespoon coconut aminos more if desired
  • 1.5 tablespoon apple cider vinegar, raw
  • 1/4 teaspoon real salt
  • 2 teaspoon sage dried
Instructions
  1. Prep and dice all vegetables, while being sure to leave the skins on the cucumber. Then combine all vegetables in a large mixing bowl and stir until combined well.
  2. In a separate smaller mixing bowl combine the lemon juice, olive oil, vinegar, sage, and salt. Whisk until combined and emulsified.
  3. Once dressing is mixed well pour into the larger mixing bowl and cover vegetables with dressing. Serve and enjoy!
