15 Minute Meal. Roasted Chicken & Veggies.

This recipe is for when you don’t have that much time, but still want to eat fresh and healthy. Super easy cleanup with this dish by only using one baking pan, line with foil for a no mess clean up. Enjoy roasted tomatoes, broccoli, peppers, onions, and zucchini. Cooked with chicken breasts, cut to 1/2″ to 1″ cubes for roasting. Add your favorite spices on top, olive oil, salt, and pepper. The 500 degree oven is most important with this recipe, allowing everything to crisp up golden brown for about 15 minutes.

Ingredients
  • 1 whole chicken breast medium (10-12 oz)
  • 1 whole bell pepper large, any color
  • 1/2 whole onion chopped in slices
  • 1 whole zucchini chopped
  • 1 cup broccoli florets
  • 1/2 cup grape tomatoes
  • 2 tbsp olive oil
  • 2 teaspoon salt
  • 1.5 teaspoon pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic granules
  • 2 tablespoon italian seasoning
  • 1 teaspoon paprika
Instructions
  1. Preheat oven to 500 degrees.
  2. Combine all spices together in a bowl. Mix well and set aside.
  3. Chop chicken into cubes 1/2" to 1". Set chicken aside and wash cutting board.
  4. Now, chop all vegetables into large pieces. Then place vegetables on sheet pan. Grab chicken and also place on the sheet pan.
  5. Cover in olive oil and liberally apply the spice blend. Place in oven and bake at 500 degrees for 15 minutes or until chicken is cooked through.
